Avocado Chorizo Bites
Makes about 24 snacks
This dish is incredibly quick and easy and everyone will just love this spicy snack. The avocado spread is so smooth and tasty that you can use it as a dip or as a flavorful alternative to mayonnaise on a sandwich.
Ingredients:
1 ripe Hass Avocado from Mexico
1/2 teaspoon salt (to taste)
1 teaspoon lemon juice
2-3 teaspoon chipotle hot sauce (to taste)
Chorizo, sliced thinly (if you can not find chorizo, pepperoni is a suitable substitute)
Cheddar Cheese, sliced thinly
Water crackers or any plain cracker
Directions:
1. Puree avocado in food processor until smooth.
2. Place puree in a bowl, stir in salt, lemon juice and chipotle hot sauce until mixed.
3. Build your snacks starting with the cracker, then place the slice of cheddar cheese on the cracker, spoon some avocado puree on the cheese and place the chorizo slice on the avocado puree. (If you want to dress it up a bit, pipe the avocado puree on using a pastry bag and a large star tip)
4. Place your snacks on a plate or serving platter and garnish with some slices of avocados.
